Samayal kurippu

When you cook tomato, add 1 tsp sugar.

It gives more flavor to the recipe

Use bits of vegetables left over for making vegetable pulao.

To make karela (bitter gourd) less bitter rub them with flour and salt.

Soak, rice, dhals and keep aside for sometime. Wash thoroughly before cooking.
When you grind for adai ,mix one boiled potato with the dhal. rice mixture.

Do not add raw oil to any pickle. Heat the oil until smoky, cool it and then use it. It will prevent the formation of fungus in the pickle.

Instead of deep frying papads, smear oil on both sides of the papad and roast it. It will taste just like deep fried papads and will be less oily. 

If ghee turns rancid, heat the ghee in a frying pan and fry 15-20 pods of garlic in it till garlic becomes brown. Remove the garlic, cool the ghee and store it.

To prevent coconut oil from freezing in winter, add a few drops of Castor oil to the coconut oil, shake well and store.

When the chili sauce bottle is almost over add a little lime juice. Shake well and use as salad dressing.

To remove the stickiness from okra, add little tamarind paste.
Add little jaggery to eggplant (kathrikai), it give nice flavor to this vegetable.
Coriander, parsley and other strong smelling herbs must be refrigerated in plastic bags after wrapping i brown papaer or newsprint. This way they will not get soggy or dry .

To get a light and better taste as a variation, dry roast rice, dal on low till aroma exudes.Then proceed for the recipe.

Keep the lemons/limes in freezer and grate whenever you need lemon juice.

Hard Gulab Jamuns will soften by pressure cooking briefly, less than one  whistle.

Mix flour and salt in left over chowli/ spinach or other subji after mashing it. Knead into dough and make masala rotis

Use a salt shaker filled with wheat flour to sprinkle over dishes while cooking when stirred it won't become lumpy. this is used to thicken watery gravy.


Add a few  drops of lemon juice to rice, while it is cooking. This will keep the grain from breaking easily.
