Salad

Salad - tomatoes stuffed with avocado, baby corn salad

Ingredients

1 large ear of raw sweet corn uncobbed or cut baby corn
1/2 red bell pepper, chopped
1 large ripe tomato,diced
3Tblsp parsley, minced
1 celery stalk, diced
1/4 cup sweet red onion, chopped

method

Wash all vegetables, remove kernels of corn from cob, dice tomato, dice celery, chop red pepper and onion, and mince the parsley. Combine in a bowl, cover and set in refrigerator while preparing avocado dressing.

Avocado dressing:

Avocado Dressing - makes 1 cup1 ripe avocado1/2 tomato1 tsp raw agave or honeyjuice of 1/2 small lime1-2 tbsp walnuts pinch of salt Directions:combine in a food processor until smooth — add a splash of water
